TAKE THE CHALLENGE by Lynn Lingenfelter I’ve been thinking a lot about challenges. The media is always challenging us about one subject or another. As I’m faced with a new challenge nearly monthly with my health, I must stop and take a look around me. Many of my clients and friends are willing to see the need for change in their bodies and their hearts, and it encourages me to be part of helping them meet their goals. There are also those, however, who are “clueless” when it comes to meeting soul deep challenges and will go as far as to deny the need to, first of all, admit that the “higher power” is actually God our Creator. He created us perfectly in body and spirit, but we have messed up big time in both areas. The psychology of the world is “You deserve a break today” and would have us think we can freely eat the things that are bad for our bodies. The enemy of our soul would have us think, “You don’t need God and you’re not bad just because you want to make it to the top, no matter what the cost, and step on or over anyone who gets in the way to get what you want”. This philosophy can lead us to think we don’t need any help. We can do it on our own. Many have shelves of “self help” books and are still looking for new books to be the perfect “self made” man or woman. Then there are those who make excuses or complain about setting goals and meeting challenges. The “I can’t do it, so why even try?” thinking could be fatal. I’m thankful my upbringing taught me to trust God and never give up. If I didn’t have that foundation of faith and hope, I might be long gone from this world. I’ve raised these issues to challenge you to face who you are and desire to begin a fresh beginning. Admit you need the Lord in your life, start reading “The Book” and commit your ways to Him. Give Jesus a chance. He’ll give you fresh hope and walk with you on your journey up your mountain. “Trust in the Lord with all your heart, and lean not on your own understanding. In all your ways acknowledge Him, and He will direct your path.” Proverbs 3:5-6

DOES IT COST MORE TO EAT HEALTHY!

In these uncertain economic times many people are looking at all the ways they can cut the fat from their budgets (and possibly their waistlines), and in so doing they continue to ask themselves “Is it more money to buy fresh meat and produce and make meals with real food( i.e. lean meats and seafood) versus buying pre-made and pre-packaged meals or driving thru a fast food joint? And if so, is it ultimately healthy for me in the long run?” Let’s break it down together to reveal the answer to these so often asked questions. When you read about foods and their cost, almost without exception you will read that it will cost you more money to eat fresh foods. Since we began our personal training studio 8 years ago, we have worked hard on overturning these beliefs. Even without the tough economic times we are currently experiencing, oftentimes many people believe that “healthy” food is too expensive. So fresh produce, lean meats and seafood ARE therefore, way out of their budget. WRONG… lets take a closer look why. Grab a piece of paper and jot down your daily and weekly food expenditures. Did you get a coffee and donut in the morning? How about lunch, was it a brown bag or did you go out with co-workers? Did you drive thru a fast food restaurant or go home and make a chicken salad for dinner? AND let’s continue on….how bout the vices? Do you have any? Like wines, beers or top shelf drinks? How bout recreational drugs or smoking/chewing tobacco products and any or all other vices out there? When you sit down and honestly list all things that you spend your money on daily and weekly, you will quickly realize that if and when you decide to LIVE and EAT healthy it is actually cheaper. Yes, that is what you read, I said CHEAPER. You will cut out your stops to Dunkin Donut’s ( didn’t say Starbucks because no one is going there anymore), McDees or whatever is your fav fast food, stop all recreational vices you may have and you will probably SAVE money. So you say, “but I don’t have any vices like alcohol, tobacco or drugs and therefore it IS more expensive to eat/ live healthy” – but and big BUT here – (no pun intended), do you eat junk as in chips and dips, ice cream, cakes, cookies, chicken wings, puddings and the list goes on…. Well, they have to go and then…it’s all cheaper…and healthier. You will end up spending more on your produce, lean meats and seafood but your overall weekly spending will remain the same if not decrease. We have touched upon the actual daily and weekly costs of eating healthier foods and the outcome it can have on your wallet. Of even bigger importance is the cost to you in the terms of your quality of life and the time you will be on this earth living it. You would have to be living in a closet not to be at least aware that what and how much you eat has a DIRECT affect on your health. So, in the cost of your life, it would never be too expensive to eat more healthy foods, which will be a good indicator of the quality and quantity of your years on this beautiful earth.

Change Yourself, Change the World
By Chrystal Ciodyk What if you woke up one morning and your body was in the best shape of your life? How would you feel? What would you do? Seeing yourself there is the first step. Knowing that you CAN get there is the second. Now it’s time to ask for help. Hundreds of people over the last 10 years, myself included, have turned to Lynn and Evey at Fit Transformations for amazing, life changing results. I am now extremely honored to join their team and very much looking forward to helping hundreds more in their journey towards transforming and having a healthier life. It’s definitely a challenge to stay in shape when the grocery stores are filled with junk and there’s an unhealthy place to eat everywhere you turn. Knowing the right foods to eat and when to eat them will get you on track. Food, family, or friends might be there to tempt you, but you have to stay focused. Only you control what you put into your mouth. Adding exercise to your daily life can be a challenge as well. If you think you don’t have time, you might want to reexamine what you are doing with your time. It’s either being invested or wasted. Step away from the TV or computer for an hour or two. It’s okay…they’ll be there when you get back! Remember, life is a challenge. You’re not giving up on life, so don’t give up on your vessel that carries you through it. When you transform your body, it will transform your life. It’s an indescribable feeling when you and others start to notice your transformation. I know I wanted to tell my family and friends how amazing I feel and how easy it is to do. I wanted everyone to start changing their eating habits and exercising with me. I was surprised to learn that most of them were happy for me, but had their own reasons for not changing. Maybe they didn’t think they could do it or they weren’t motivated enough. As I refuse to give up on myself, I surely won’t give up on them. It is my personal goal to help everyone I know look and feel their best. If every person tried to help everyone they know, then those people helped people they know….We could change the world! RIGHT!!

Recipes
With Easter right around the corner we thought we would include some recipes that you could serve visiting guests that are easy, quick and healthy.
Turkey Sausage Frittata

3 tbsp. olive oil 1 lg. onion, chopped 1 red bell pepper, chopped 1 c. sliced fresh mushrooms 12 eggs 3 oz. cooked turkey sausage cut and chopped ½ c. low fat milk ½ tsp. black pepper
Preheat oven to 350 degrees. In 10 inch cast-iron skillet, heat oil over medium-high heat. Add onion, red pepper and mushroom; cook, stirring occasionally, 7 to 8 minutes until vegetables are tender. In large bowl, whisk together eggs, turkey sausage, milk and black pepper.
Pour over vegetables in skillet. Place skillet in oven; bake 15 to 20 minutes until egg mixture is set. Use a spatula to slide the frittata onto large serving platter. Cut into wedges, serve warm. Serves 8.
The beauty of frittatas is you can really add just about any kinds of vegetables and mix and match your meats. A little cheese can be added and so on…lots of versatility and easy…they even taste good cold and the next day.
Turkey Pinwheels By Muscle and Fitness Magazine
8 oz. turkey breast slices ½ cup low-fat ricotta cheese Spices of your choice (pepper and sea salt, Italian seasoning or salt and cayenne seasoning) ¼ c. Parmesan cheese Nonstick cooking spray
Preheat oven to 350 degrees. Place a large plastic wrap on your counter, lay turkey slices on it, and inch apart, and top with another piece of plastic wrap. Using your palm, gently flatten each slice until it’s ¼ – 1/8 – inch thick.
In a small bowl, mix ricotta and spices; spread Parmesan onto large plate. Remove top layer of plastic wrap and divide ricotta mixture among turkey slices, spooning it onto one end of each piece.
Roll turkey slice around cheese mixture, then coat with Parmesan before placing seam-side down in a 2-quart glass baking dish coated with nonstick cooking spray. Bake for 30-35 minutes, or until meat is cooked through. Two-Pasta Macaroni Salad By Shape Magazine
Serves 6 2/3 cup dry whole-wheat fusilla 2/3 cup dry regular fusilla ¼ cup reduced-fat mayonnaise ¼ cup nonfat Greek yogurt 2 tablespoons apple cider vinegar 1 ½ teaspoons Dijon mustard ½ teaspoon salt, or to taste ¼ teaspoon freshly ground black pepper 2 medium carrots, grated ½ red or yellow bell pepper, finely chopped 3 scallions, thinly sliced 3 tablespoons chopped fresh parsley
In a medium saucepan, bring 2 quarts of water to a boil. Cook fusilla for 10 minutes or until al dente. Drain, run under cool water, and set aside.
Meanwhile, whisk together mayonnaise, yogurt, vinegar, mustard, salt and pepper. Add pasta and toss to combine. Gently mix in carrots, bell pepper, and scallions. Refrigerate for at least one hour to allow flavors to blend. When ready to serve, top with parsley. Ideas for stuffed vegetables or stuffed fruit -Try loading half a cantaloupe with your favorite yogurt and topping it with slivered almonds and raisins. -Blend low-fat cottage cheese or part-skim ricotta with minced scallions and other vegetables and spoon into a hollowed-out bell pepper or tomato
